Ingredients

The spring rolls

  • 10 pieces rice paper wrappers
  • ½ head red leaf lettuce
  • 2 oz. bean threads
  • 1 medium mango
  • 1 medium red bell pepper
  • ½ bunch cilantro
  • 8 oz. krab

The peanut sauce

  • ¼ cup smooth natural peanut butter
  • ¼ cup hoisin sauce
  • ½ inch fresh ginger, grated
  • ¼ tsp sriracha sauce
  • ¼ cup + 2 Tbsp hot water

Instructions

  1. Prepare the peanut sauce by mixing hoisin sauce, peanut butter, sriracha, and grated ginger in a bowl.
  2. Add ¼ cup of hot water and whisk until combined, then add more hot water to reach the desired consistency.
  3. Prepare the filling ingredients: slice the red bell pepper and mango, soak the bean threads, chop the lettuce, and pull the cilantro leaves from the stems.
  4. Soak one rice paper wrapper in warm water for about five seconds until soft.
  5. Lay the soft wrapper on a clean surface, place the fillings on one side, and roll it up, folding in the sides to seal.
  6. Repeat the filling and rolling process until all ingredients are used.
  7. Serve the spring rolls with the peanut sauce on the side.
