Homemade White Cheddar Mac and Cheese

Ingredients

The pasta

  • 16 ounces elbow noodles

The cheese sauce

  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • 1 ½ pounds sharp white cheddar cheese
  • ½ pound smoked Gouda cheese
  • 4 ounces cream cheese
  • 1 teaspoon dried mustard
  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground black pepper
  • ¼ teaspoon cayenne pepper

The topping

  • 2 tablespoons olive oil
  • ½ cup breadcrumbs

Instructions

  1. Preheat the oven to 350°F and prepare a 13 x 9 casserole dish with cooking spray.
  2. Cook the pasta in salted boiling water according to package directions, then drain.
  3. Melt butter in a large saucepan over medium heat and whisk in flour, cooking for three minutes.
  4. Add milk to the saucepan and cook for about six minutes until the sauce thickens.
  5. Reduce heat to low and stir in cheddar, gouda, and cream cheese until melted.
  6. Mix in dried mustard, salt, pepper, and cayenne pepper.
  7. Combine the drained noodles with the cheese sauce and transfer to the casserole dish.
  8. Mix breadcrumbs with olive oil and sprinkle over the mac and cheese.
  9. Bake for 20 to 25 minutes until golden and bubbly.
