Garlicky Chard Pasta

Ingredients

The pasta

  • 4 ounces dry pasta (linguini, spaghetti, etc.)
  • 2 tablespoons olive oil
  • 6 cloves garlic (rough chopped)
  • 1 shallot (finely sliced)
  • 1 bunch chard (chopped, stems separated)
  • ½ teaspoon kosher salt
  • ½ teaspoon cracked pepper
  • 1 lemon zest

Toasted bread crumbs

  • 1 tablespoon olive oil
  • ½ cup bread (crumbled and torn)
  • 2 cloves garlic (sliced, optional)

Optional toppings

  • chili flakes
  • toasted pine nuts
  • pecorino cheese

Instructions

  1. Cook the pasta in salted boiling water according to package directions, saving 1 cup of pasta water after draining.
  2. In a skillet, heat olive oil and sauté garlic and shallot until golden.
  3. Add chard stems and sauté for a couple of minutes, then add the rest of the chard until wilted.
  4. In another skillet, heat oil and sauté sliced garlic until crispy, then toast the bread crumbs until golden.
  5. Combine the cooked pasta with the wilted chard, lemon zest, salt, and pepper, adding pasta water as needed.
  6. Serve in bowls, topped with garlic chips, toasted bread crumbs, and optional toppings.
