Vegan Lasagna Roll-Ups with Cashew Ricotta

Instructions
- Grease a 14 X 11 inch baking dish and set aside.
- Preheat oven to 400°F and bring a large pot of salted water to a boil.
- Boil the lasagna sheets for around 5 minutes until al dente.
- Remove the pasta and place it in a lightly greased bowl with olive oil.
- Spread 2 tablespoons of ricotta on each lasagna sheet, leaving ½ inch on each side.
- Add approximately 2 tablespoons of meat sauce on top of the ricotta.
- Roll up the lasagna sheets and place them in the greased baking dish.
- Top the roll-ups with the remaining meat sauce and optional parmesan cheese.
- Bake for 35-40 minutes.
