Vegan Lasagna Roll-Ups with Cashew Ricotta

Ingredients

The pasta

  • 1 package lasagna sheets of choice

The filling

  • 1 batch Vegan Ricotta
  • 1 batch Vegan Meat Sauce

The topping

  • 1 cup vegan parmesan cheese (optional)

Instructions

  1. Grease a 14 X 11 inch baking dish and set aside.
  2. Preheat oven to 400°F and bring a large pot of salted water to a boil.
  3. Boil the lasagna sheets for around 5 minutes until al dente.
  4. Remove the pasta and place it in a lightly greased bowl with olive oil.
  5. Spread 2 tablespoons of ricotta on each lasagna sheet, leaving ½ inch on each side.
  6. Add approximately 2 tablespoons of meat sauce on top of the ricotta.
  7. Roll up the lasagna sheets and place them in the greased baking dish.
  8. Top the roll-ups with the remaining meat sauce and optional parmesan cheese.
  9. Bake for 35-40 minutes.
