Ingredients

The noodles and sauce

  • 12 noodles lasagna noodles
  • 2 cups marinara sauce

The filling

  • 10 ounces frozen spinach
  • 2 cups vegan ricotta cheese
  • 1 cup vegan mozzarella cheese
  • 2 cloves garlic
  • 2 teaspoons Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles until al dente, then lay them flat to prevent sticking.
  3. Spread 1 cup of marinara sauce in a baking dish.
  4. Prepare the filling by squeezing excess water from the spinach and mixing it with vegan ricotta, mozzarella, garlic, Italian seasoning, salt, and pepper.
  5. Spread ⅓ cup of filling on each noodle, roll it tightly, and place it seam side down in the baking dish.
  6. Pour the remaining marinara sauce over the rolled noodles and add more mozzarella if desired.
  7. Cover with foil and bake for 25-30 minutes, then remove the foil and bake for an additional 7-10 minutes.
