Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles until al dente, then lay them flat to prevent sticking.
- Spread 1 cup of marinara sauce in a baking dish.
- Prepare the filling by squeezing excess water from the spinach and mixing it with vegan ricotta, mozzarella, garlic, Italian seasoning, salt, and pepper.
- Spread ⅓ cup of filling on each noodle, roll it tightly, and place it seam side down in the baking dish.
- Pour the remaining marinara sauce over the rolled noodles and add more mozzarella if desired.
- Cover with foil and bake for 25-30 minutes, then remove the foil and bake for an additional 7-10 minutes.
