Spinach Lasagna Roll-Ups

Instructions
- Preheat the oven to 350°F.
- In a small bowl, mix the filling ingredients together, using only ½ cup of the mozzarella.
- In another bowl, whisk together the marinara sauce and spices.
- Spread ⅔ cup of the marinara sauce mixture on the bottom of a baking dish.
- Lay a lasagna noodle flat and spread ¼ cup of the filling evenly over it, then roll it up from one end.
- Place the rolled noodles seam side down in the baking dish.
- Pour the remaining ⅓ cup of marinara sauce over the rolled noodles and sprinkle with the remaining mozzarella cheese.
- Cover the dish loosely with aluminum foil and bake for 15 minutes, then remove the foil and bake for another 15 minutes.
- Garnish with parsley, basil, and Parmesan cheese before serving.
