Spinach Lasagna Roll-Ups

Ingredients

The filling

  • cups part-skim ricotta cheese
  • 1 cup mozzarella cheese (divided)
  • ¾ cup frozen chopped spinach (thawed and drained)
  • ½ teaspoon kosher salt
  • ¼ teaspoon fresh ground black pepper

The remainder of the dish

  • 1 cup marinara sauce
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon crushed red pepper flakes
  • 8 pieces lasagna noodles (cooked)
  • to taste fresh parsley or basil (for garnish)
  • to taste Parmesan cheese (for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. In a small bowl, mix the filling ingredients together, using only ½ cup of the mozzarella.
  3. In another bowl, whisk together the marinara sauce and spices.
  4. Spread ⅔ cup of the marinara sauce mixture on the bottom of a baking dish.
  5. Lay a lasagna noodle flat and spread ¼ cup of the filling evenly over it, then roll it up from one end.
  6. Place the rolled noodles seam side down in the baking dish.
  7. Pour the remaining ⅓ cup of marinara sauce over the rolled noodles and sprinkle with the remaining mozzarella cheese.
  8. Cover the dish loosely with aluminum foil and bake for 15 minutes, then remove the foil and bake for another 15 minutes.
  9. Garnish with parsley, basil, and Parmesan cheese before serving.
