Spinach Lasagna

frozen spinach (thawed and squeezed dry)

The lasagna

pasta sauce

whole-wheat lasagna (no-boil)
Instructions
- Preheat the oven to 375°F.
- In a large bowl, mix the ricotta, mozzarella, ¾ cup of the Parmesan, spinach, egg, and salt.
- In a 13 x 9 inch baking dish, spread ¾ cup of sauce on the bottom.
- Layer a few noodles on top, then spread a third of the cheese mixture and another ¾ cup of sauce.
- Repeat the layers until all ingredients are used, ending with sauce on top.
- Sprinkle the remaining ¼ cup of Parmesan on top, cover with foil, and bake for 30 minutes.
- Remove the foil and bake for an additional 20 to 25 minutes until the noodles are soft.
- Let rest for 5 minutes, serve warm, and enjoy.
