Spinach Lasagna Rolls

Ingredients

The filling

  • 1 tablespoon olive oil
  • ½ cup diced red onion
  • 2 cloves garlic
  • 4 cups fresh spinach
  • cups small curd cottage cheese
  • ¼ teaspoon garlic powder
  • ½ teaspoon dried basil
  • to taste salt
  • to taste pepper

The assembly

  • 10 sheets lasagna
  • 2 cups marinara sauce
  • ¾ cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 350°F and grease a baking sheet.
  2. In a skillet, heat olive oil and sauté onions until translucent, then add garlic and spinach until wilted.
  3. Remove from heat and let cool for 5 minutes.
  4. Boil lasagna noodles until al dente, then cool on a greased baking sheet.
  5. In a bowl, mix the sautéed veggies with cottage cheese, garlic powder, basil, salt, and pepper.
  6. Spread marinara sauce in a baking dish and assemble the rolls by spreading filling on noodles and rolling them up.
  7. Place the rolls in the baking dish, top with remaining marinara sauce and mozzarella cheese.
  8. Cover with foil and bake for 40 minutes.
