Spinach Lasagna Rolls

Instructions
- Preheat the oven to 350°F and grease a baking sheet.
- In a skillet, heat olive oil and sauté onions until translucent, then add garlic and spinach until wilted.
- Remove from heat and let cool for 5 minutes.
- Boil lasagna noodles until al dente, then cool on a greased baking sheet.
- In a bowl, mix the sautéed veggies with cottage cheese, garlic powder, basil, salt, and pepper.
- Spread marinara sauce in a baking dish and assemble the rolls by spreading filling on noodles and rolling them up.
- Place the rolls in the baking dish, top with remaining marinara sauce and mozzarella cheese.
- Cover with foil and bake for 40 minutes.
