Ingredients

The sauce

  • 2 Tbsp extra virgin olive oil
  • cup finely chopped yellow onion
  • 3 cloves garlic
  • 1 28 oz can crushed tomatoes
  • 1 Tbsp tomato paste
  • 2 Tbsp chopped fresh basil
  • to taste salt
  • to taste freshly ground black pepper

The pasta

  • 12 lasagna noodles

The filling

  • 1 10 oz pkg fresh spinach
  • 15 oz ricotta cheese
  • 1 large egg
  • 2 Tbsp chopped fresh parsley
  • 10 oz mozzarella, shredded
  • 3 oz finely asiago cheese
  • 2 oz finely shredded Romano or parmesan cheese

Instructions

  1. Heat olive oil in a medium saucepan and sauté onion until tender.
  2. Add garlic and sauté for an additional 30 seconds.
  3. Stir in crushed tomatoes, tomato paste, and basil; season with salt and pepper.
  4. Simmer the sauce on low heat for about 10 minutes.
  5. Prepare the lasagna noodles according to package directions and drain.
  6. Chop the steamed or thawed spinach and mix it with ricotta, egg, parsley, and seasonings.
  7. Add 1 ½ cups of mozzarella, asiago, and Romano cheese to the spinach mixture.
  8. Spread the cheese mixture on each noodle and roll them up.
  9. Pour marinara sauce into a baking dish and place the roll-ups inside.
  10. Cover with remaining marinara sauce and sprinkle with the rest of the mozzarella.
  11. Bake in a preheated oven at 375°F for 20 to 28 minutes.
