Instructions
- Heat olive oil in a medium saucepan and sauté onion until tender.
- Add garlic and sauté for an additional 30 seconds.
- Stir in crushed tomatoes, tomato paste, and basil; season with salt and pepper.
- Simmer the sauce on low heat for about 10 minutes.
- Prepare the lasagna noodles according to package directions and drain.
- Chop the steamed or thawed spinach and mix it with ricotta, egg, parsley, and seasonings.
- Add 1 ½ cups of mozzarella, asiago, and Romano cheese to the spinach mixture.
- Spread the cheese mixture on each noodle and roll them up.
- Pour marinara sauce into a baking dish and place the roll-ups inside.
- Cover with remaining marinara sauce and sprinkle with the rest of the mozzarella.
- Bake in a preheated oven at 375°F for 20 to 28 minutes.
