Ingredients

The noodles and sauce

  • 14 pieces lasagna noodles
  • 24 oz marinara sauce
  • 2 tablespoons olive oil

The filling

  • 1 lb ground beef
  • 1 small yellow onion
  • 1 tablespoon minced garlic
  • 10 oz fresh spinach
  • 1.5 cups whole milk ricotta cheese
  • 1.5 cups shredded mozzarella cheese
  • ½ cup shredded parmesan cheese
  • 2 tablespoons fresh thyme
  • 1 teaspoon garlic powder
  • ½ teaspoon salt

Instructions

  1. Cook the lasagna noodles in salted water until slightly under al dente, then rinse with cold water and drizzle with olive oil.
  2. In a Dutch oven, brown the ground beef, then add the onion and garlic until the onion is translucent.
  3. Add the spinach to the meat mixture and cover until wilted, then set aside.
  4. Mix ricotta, 1 cup mozzarella, ¼ cup parmesan, thyme, garlic powder, and salt in a bowl.
  5. Combine the spinach mixture with the cheese mixture until well mixed.
  6. Preheat the oven to 350°F and pour 1.5 cups of marinara sauce into a baking dish.
  7. Spread the cheese mixture on each lasagna noodle and roll them up, placing them in the baking dish.
  8. Pour the remaining marinara sauce over the roll ups.
  9. Bake for 25 minutes, then sprinkle with remaining cheeses and bake for an additional 5 minutes.
  10. Let sit for 5-10 minutes before serving.
