Meat and Cheese Lasagna Roll Ups

Instructions
- Cook the lasagna noodles in salted water until slightly under al dente, then rinse with cold water and drizzle with olive oil.
- In a Dutch oven, brown the ground beef, then add the onion and garlic until the onion is translucent.
- Add the spinach to the meat mixture and cover until wilted, then set aside.
- Mix ricotta, 1 cup mozzarella, ¼ cup parmesan, thyme, garlic powder, and salt in a bowl.
- Combine the spinach mixture with the cheese mixture until well mixed.
- Preheat the oven to 350°F and pour 1.5 cups of marinara sauce into a baking dish.
- Spread the cheese mixture on each lasagna noodle and roll them up, placing them in the baking dish.
- Pour the remaining marinara sauce over the roll ups.
- Bake for 25 minutes, then sprinkle with remaining cheeses and bake for an additional 5 minutes.
- Let sit for 5-10 minutes before serving.
