Ingredients

The sauce

  • 2 teaspoons olive oil
  • 1 pound lean ground beef
  • cup onion, finely diced
  • 1 teaspoon minced garlic
  • 24 ounces marinara sauce
  • to taste salt and pepper

The ricotta mixture

  • 15 ounces ricotta cheese
  • 1 large egg
  • ½ cup grated parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper

For assembly

  • 12 pieces lasagna noodles, cooked
  • cups shredded mozzarella cheese
  • 2 tablespoons chopped parsley
  • as needed cooking spray

Instructions

  1. Preheat the oven to 375°F and coat a baking dish with cooking spray.
  2. Heat olive oil in a pan, add ground beef, and season with salt and pepper. Cook until browned.
  3. Add diced onion and cook until tender, then add minced garlic and cook briefly.
  4. Pour marinara sauce into the pan and let it simmer for 5 minutes.
  5. In a bowl, combine ricotta cheese, egg, parmesan, mozzarella, Italian seasoning, salt, and pepper until smooth.
  6. Spread some sauce in the baking dish, then lay out lasagna noodles and spread ricotta mixture on each.
  7. Top with meat sauce, roll up the noodles, and place them in the baking dish.
  8. Spoon reserved sauce over the rolls, sprinkle with mozzarella cheese, and bake covered for 20 minutes, then uncovered for 10 minutes until cheese is melted.
  9. Sprinkle with parsley before serving.
