Instructions
- Melt butter in a pan and cook spinach until wilted, then cool and squeeze out excess water.
- Chop spinach and mix with ricotta, eggs, Parmesan, 1 cup mozzarella, salt, pepper, and Italian seasoning.
- Cook lasagna noodles according to package directions.
- Preheat oven to 375°F and spray a baking pan with cooking spray.
- Spread a small amount of marinara sauce in the pan, layer noodles, cheese mixture, and marinara sauce, repeating layers and finishing with marinara.
- Cover with foil and bake for 45 minutes, then uncover and add remaining mozzarella cheese.
- Bake for an additional 15 minutes until cheese is melted and browned.
- Sprinkle with parsley, let stand for 5-10 minutes, slice, and serve.
