Spinach Lasagna

Ingredients

Filling

  • 1 tablespoon butter
  • 24 ounces fresh spinach leaves
  • 15 ounces ricotta cheese
  • 2 large eggs
  • ¾ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon Italian seasoning

Assembly

  • 1 box lasagna noodles
  • 24 ounces marinara sauce
  • 2 cups shredded mozzarella cheese
  • cooking spray
  • 2 tablespoons chopped parsley

Instructions

  1. Melt butter in a pan and cook spinach until wilted, then cool and squeeze out excess water.
  2. Chop spinach and mix with ricotta, eggs, Parmesan, 1 cup mozzarella, salt, pepper, and Italian seasoning.
  3. Cook lasagna noodles according to package directions.
  4. Preheat oven to 375°F and spray a baking pan with cooking spray.
  5. Spread a small amount of marinara sauce in the pan, layer noodles, cheese mixture, and marinara sauce, repeating layers and finishing with marinara.
  6. Cover with foil and bake for 45 minutes, then uncover and add remaining mozzarella cheese.
  7. Bake for an additional 15 minutes until cheese is melted and browned.
  8. Sprinkle with parsley, let stand for 5-10 minutes, slice, and serve.
