Shrimp and Feta Orzo

Instructions
- Preheat the oven to 400°F.
- Boil water in a large pot, add salt and oil, then cook the orzo for 9 to 11 minutes.
- Drain the orzo and mix it with lemon juice, olive oil, salt, and pepper.
- On a sheet pan, toss the shrimp with olive oil, salt, pepper, and shallot, then roast for 5 to 6 minutes.
- Combine the roasted shrimp with the orzo, scallions, dill, parsley, cucumber, salt, and pepper.
- Gently fold in the feta and let the mixture sit for 1 hour at room temperature or refrigerate overnight.
