Greek Shrimp and Orzo Pasta Bake

Ingredients

The pasta

  • 1 cup orzo
  • 2 cups water
  • 1 tbsp chicken stock paste
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tsp dried oregano
  • 3 tbsp tomato paste
  • 1 540 ml can diced tomatoes
  • cup finely chopped castelvetrano olives

The protein

  • 1 lb defrosted shrimp, peeled and deveined

The toppings

  • 2 tbsp olive oil
  • ½ cup crumbled feta cheese
  • to taste fresh oregano for garnish

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium-sized baking dish, mix the orzo, chicken stock paste, water, onion powder, garlic powder, salt, pepper, dried oregano, tomato paste, diced tomatoes, and olives until well combined.
  3. Bake for 12-15 minutes or until the orzo is al dente.
  4. Add the shrimp to the pan and stir, then drizzle with olive oil and bake for another 5-7 minutes until the shrimp are just done.
  5. Stir and serve topped with crumbled feta cheese and fresh oregano.
