Ingredients

The main dish

  • cups dry orzo pasta or one package Eat Banza Chickpea Rice
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, mashed
  • 1 14.5 ounce can fire roasted diced tomatoes
  • cups chicken broth
  • ¾ cup full fat coconut milk
  • 1 pound raw shrimp
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • to taste salt and black pepper

Optional garnishes

  • to taste chopped avocado
  • to taste cheese
  • to taste limes
  • to taste cilantro

Instructions

  1. Pat and dry the shrimp and set aside.
  2. Heat olive oil in a pot over medium heat.
  3. Add the diced onion and stir for about three minutes until softened.
  4. Add the mashed garlic and stir for an additional minute.
  5. Incorporate the orzo, diced tomatoes, chicken broth, coconut milk, and seasonings, stirring for another minute or two.
  6. Add the shrimp and stir well.
  7. Cover the pot, reduce heat to low, and cook for about 10 minutes until the liquid is absorbed.
  8. Adjust seasonings, add garnishes, and serve.
