One Pot Shrimp Orzo

Instructions
- Pat and dry the shrimp and set aside.
- Heat olive oil in a pot over medium heat.
- Add the diced onion and stir for about three minutes until softened.
- Add the mashed garlic and stir for an additional minute.
- Incorporate the orzo, diced tomatoes, chicken broth, coconut milk, and seasonings, stirring for another minute or two.
- Add the shrimp and stir well.
- Cover the pot, reduce heat to low, and cook for about 10 minutes until the liquid is absorbed.
- Adjust seasonings, add garnishes, and serve.
