Ingredients

The base

  • 1 8oz block light cream cheese, softened
  • cup pumpkin puree
  • 10 pieces graham crackers, crushed finely
  • ½ cup powdered sugar
  • 2 tsp pumpkin pie spice
  • a tiny pinch salt
  • ½ tsp vanilla

The coating

  • 2 cups white chocolate
  • 1 tbsp coconut oil
  • extra for topping crushed graham cracker

Instructions

  1. Blend graham crackers in a food processor until fine crumbs.
  2. In a large bowl, mix together softened cream cheese, pumpkin, crushed graham, and powdered sugar.
  3. Add pumpkin pie spice, salt, and vanilla to the mixture.
  4. Freeze the mixture for 1 hour. If it's too soft, add two more crushed graham crackers.
  5. Roll the mixture into about 20 balls and freeze for another 30 minutes.
  6. Melt white chocolate and coconut oil together in the microwave in 30-second increments, stirring in between.
  7. Coat each ball in the melted white chocolate and top with extra crushed graham crackers.
  8. Store in the refrigerator.
