Pumpkin Pie Cheesecake Balls

Instructions
- Blend graham crackers in a food processor until fine crumbs.
- In a large bowl, mix together softened cream cheese, pumpkin, crushed graham, and powdered sugar.
- Add pumpkin pie spice, salt, and vanilla to the mixture.
- Freeze the mixture for 1 hour. If it's too soft, add two more crushed graham crackers.
- Roll the mixture into about 20 balls and freeze for another 30 minutes.
- Melt white chocolate and coconut oil together in the microwave in 30-second increments, stirring in between.
- Coat each ball in the melted white chocolate and top with extra crushed graham crackers.
- Store in the refrigerator.
