Chocolate Ganache Tart

Ingredients

The crust

  • 4 Tbsp. unsalted butter, melted
  • cups mixed raw nuts
  • 6 Tbsp. sugar
  • ¾ tsp. kosher salt

The ganache

  • 12 oz. bittersweet chocolate, chopped
  • 2 cups heavy cream
  • 6 Tbsp. unsalted butter, room temperature

For assembly

  • to taste flaky sea salt

Instructions

  1. Preheat the oven to 350°F and prepare the tart pan.
  2. Pulse the nuts in a food processor, then mix in sugar and salt, followed by melted butter.
  3. Press the mixture into the tart pan and bake until golden brown, about 20-25 minutes.
  4. Cool the crust before preparing the ganache.
  5. Heat cream until simmering and pour over the chopped chocolate, letting it sit for 5 minutes.
  6. Stir in room temperature butter until the ganache is smooth and glossy.
  7. Pour the ganache into the cooled crust and chill until set, at least 1 hour.
  8. Remove the tart from the pan and sprinkle with sea salt before slicing.
