Oven Baked Chicken and Rice

Ingredients

The chicken

  • 5 pieces bone-in chicken thigh fillets

The rice

  • cups uncooked white rice
  • cups chicken broth/stock, hot
  • cups water, hot

The flavor base

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter

The seasoning

  • 1 tsp paprika powder
  • 1 tsp dried thyme
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¾ tsp salt
  • to taste black pepper

Optional garnish

  • to taste oil spray
  • to taste fresh thyme leaves or finely chopped parsley

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Scatter chopped onion and minced garlic in a baking dish and place butter in the center. Bake for 15 minutes.
  3. While baking, mix the chicken rub ingredients and sprinkle on both sides of the chicken.
  4. Remove the baking dish from the oven, add rice and mix it with the onion and garlic.
  5. Place the seasoned chicken on top of the rice, then pour hot chicken broth and water around the chicken.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove the foil, optionally spray chicken with oil, and bake for an additional 20 minutes until liquid is absorbed.
  8. Let it stand for 5 minutes, then remove the chicken and fluff the rice. Garnish if desired and serve.
