Oven Baked Chicken and Rice

Instructions
- Preheat the oven to 180°C (350°F).
- Scatter chopped onion and minced garlic in a baking dish and place butter in the center. Bake for 15 minutes.
- While baking, mix the chicken rub ingredients and sprinkle on both sides of the chicken.
- Remove the baking dish from the oven, add rice and mix it with the onion and garlic.
- Place the seasoned chicken on top of the rice, then pour hot chicken broth and water around the chicken.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil, optionally spray chicken with oil, and bake for an additional 20 minutes until liquid is absorbed.
- Let it stand for 5 minutes, then remove the chicken and fluff the rice. Garnish if desired and serve.
