Instructions
- 1. Preheat the oven to 400°F and adjust the oven racks as needed.
- 2. Mix the seasoning ingredients in a bowl.
- 3. Prepare the garlic and onion.
- 4. Season the chicken with half of the seasoning mix.
- 5. Sear the chicken in a dutch oven for 2 minutes on each side, then remove it.
- 6. Add more oil to the pan and cook the onion and garlic for 2-3 minutes.
- 7. Add the rice, broth, frozen vegetables, and remaining seasoning mix to the pan.
- 8. Stir to ensure the rice is mixed in with the liquid.
- 9. Place the chicken on top of the rice mixture, cover, and transfer to the oven.
- 10. Bake for 40-45 minutes until the rice is fully cooked.
