Ingredients

The chicken

  • 2 lbs Boneless skinless chicken thighs

The cooking oil

  • 3 tbsp avocado oil

The rice and broth

  • 1 cup uncooked white rice
  • 2 cups chicken broth

The vegetables

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 16 oz frozen mixed vegetables

The seasoning mix

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp ground sage
  • 1 tsp oregano
  • 1 tsp sea salt

Instructions

  1. 1. Preheat the oven to 400°F and adjust the oven racks as needed.
  2. 2. Mix the seasoning ingredients in a bowl.
  3. 3. Prepare the garlic and onion.
  4. 4. Season the chicken with half of the seasoning mix.
  5. 5. Sear the chicken in a dutch oven for 2 minutes on each side, then remove it.
  6. 6. Add more oil to the pan and cook the onion and garlic for 2-3 minutes.
  7. 7. Add the rice, broth, frozen vegetables, and remaining seasoning mix to the pan.
  8. 8. Stir to ensure the rice is mixed in with the liquid.
  9. 9. Place the chicken on top of the rice mixture, cover, and transfer to the oven.
  10. 10. Bake for 40-45 minutes until the rice is fully cooked.
