Instructions
- Preheat the oven to 450°F (232°C) and prepare a baking sheet.
- In a bowl, mash the butter and mix in garlic, herbs, and salt.
- Dry the chicken with paper towels and separate the skin from the meat, placing dollops of butter underneath.
- Drizzle oil over the chicken and season with salt, paprika, garlic powder, and pepper.
- Bake the chicken skin side down for 10 minutes.
- Flip the chicken skin side up and roast until the internal temperature reaches 170°F (77°C), about 15 more minutes.
- Let the chicken rest for 5 minutes before serving.
