Oven Baked Chicken Thighs

Ingredients

Compound Butter

  • ¼ cup Unsalted butter (softened)
  • 2 cloves Garlic (crushed)
  • ½ tbsp Fresh parsley (chopped)
  • ½ tbsp Fresh dill (chopped)
  • tsp Sea salt

Chicken

  • 3 lb Bone-in chicken thighs (with skin)
  • 2 tbsp Avocado oil
  • ½ tbsp Sea salt
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • ¼ tsp Black pepper

Instructions

  1. Preheat the oven to 450°F (232°C) and prepare a baking sheet.
  2. In a bowl, mash the butter and mix in garlic, herbs, and salt.
  3. Dry the chicken with paper towels and separate the skin from the meat, placing dollops of butter underneath.
  4. Drizzle oil over the chicken and season with salt, paprika, garlic powder, and pepper.
  5. Bake the chicken skin side down for 10 minutes.
  6. Flip the chicken skin side up and roast until the internal temperature reaches 170°F (77°C), about 15 more minutes.
  7. Let the chicken rest for 5 minutes before serving.
