Ingredients

The chicken

  • 3 lbs bone-in chicken thighs

The seasoning

  • 1 tsp mustard powder
  • ½ tsp sea salt
  • ½ tsp thyme

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with parchment paper or oil.
  2. Mix the seasoning ingredients in a small bowl.
  3. Pat the chicken thighs dry and place them on the baking sheet.
  4. Drizzle oil over the chicken and brush to coat both sides.

  6. Bake in the oven for 30-40 minutes, checking for an internal temperature of at least 165°F.
