Ingredients

The crust

  • 1 cup graham cracker crumbs
  • 4 ½ Tbsp unsalted butter, melted

The filling

  • 2 Tbsp cold water
  • 1 ½ tsp powdered gelatin
  • cup heavy cream
  • 2 packages (8 oz) cream cheese, softened
  • ¾ cup powdered sugar
  • ¼ cup sour cream
  • 1 ½ tsp vanilla extract

The blueberry sauce

  • cup sugar
  • 2 ½ tsp cornstarch
  • ¼ cup water
  • 1 Tbsp lemon juice
  • 2 cups fresh blueberries
  • 1 Tbsp unsalted butter

Instructions

  1. Line an 8 by 8-inch baking dish with aluminum foil and spray with non-stick cooking spray.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of the dish, then chill.
  3. Sprinkle gelatin over cold water and let it rest.
  4. Whip heavy cream until stiff peaks form.
  5. In another bowl, mix cream cheese and powdered sugar until smooth, then add sour cream and vanilla.
  6. Heat gelatin mixture briefly in the microwave, whisk to dissolve, and cool slightly.
  7. Combine gelatin mixture with cream cheese mixture and fold in whipped cream.
  8. Spread the mixture over the chilled crust and cover, then chill for about 3 hours to set.
  9. For the blueberry sauce, combine sugar and cornstarch in a saucepan, add water and lemon juice, then stir in blueberries and bring to a boil.
  10. Allow the sauce to thicken, then stir in butter and cool completely before serving with the cheesecake.
