No Bake Cheesecake

Instructions
- Line an 8 by 8-inch baking dish with aluminum foil and spray with non-stick cooking spray.
- Mix graham cracker crumbs with melted butter and press into the bottom of the dish, then chill.
- Sprinkle gelatin over cold water and let it rest.
- Whip heavy cream until stiff peaks form.
- In another bowl, mix cream cheese and powdered sugar until smooth, then add sour cream and vanilla.
- Heat gelatin mixture briefly in the microwave, whisk to dissolve, and cool slightly.
- Combine gelatin mixture with cream cheese mixture and fold in whipped cream.
- Spread the mixture over the chilled crust and cover, then chill for about 3 hours to set.
- For the blueberry sauce, combine sugar and cornstarch in a saucepan, add water and lemon juice, then stir in blueberries and bring to a boil.
- Allow the sauce to thicken, then stir in butter and cool completely before serving with the cheesecake.
