Instructions
- For the crust, combine graham cracker crumbs, brown sugar, and cinnamon (if using).
- Add melted butter and mix until well blended, then press into a pie plate.
- Refrigerate for a softer crust or bake at 375°F for 5-6 minutes for a crispier crust.
- Cool the crust completely before filling.
- For the filling, beat the whipping cream until it reaches stiff peaks.
- In a separate bowl, beat the cream cheese until light and fluffy.
- Mix in lemon juice, vanilla, and sour cream until smooth.
- Gradually add powdered sugar while continuing to beat until smooth.
- Fold the whipped cream into the cream cheese mixture gently.
- Pour the filling into the cooled crust and smooth the top.
- Chill in the fridge for at least 4-6 hours or overnight before serving.
