Ingredients

The crust

  • cups graham cracker crumbs
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon (optional)
  • 6 tablespoons melted butter

The filling

  • cups whipping cream (heavy or regular)
  • 16 oz cream cheese (at room temperature, 2 standard blocks/packages)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • cup sour cream
  • 1 cup powdered sugar
  • optional lemon zest

Instructions

  1. For the crust, combine graham cracker crumbs, brown sugar, and cinnamon (if using).
  2. Add melted butter and mix until well blended, then press into a pie plate.
  3. Refrigerate for a softer crust or bake at 375°F for 5-6 minutes for a crispier crust.
  4. Cool the crust completely before filling.
  5. For the filling, beat the whipping cream until it reaches stiff peaks.
  6. In a separate bowl, beat the cream cheese until light and fluffy.
  7. Mix in lemon juice, vanilla, and sour cream until smooth.
  8. Gradually add powdered sugar while continuing to beat until smooth.
  9. Fold the whipped cream into the cream cheese mixture gently.
  10. Pour the filling into the cooled crust and smooth the top.
  11. Chill in the fridge for at least 4-6 hours or overnight before serving.
