Ingredients

Graham Cracker Crust

  • cup graham cracker crumbs
  • 2 Tbsp. melted coconut oil or butter

Cheesecake Filling

  • 2 8 oz. packages low-fat cream cheese
  • 1 cup low-fat vanilla Greek yogurt
  • ¼ cup honey
  • 2 Tbsp. lemon juice
  • 1 Tbsp. vanilla extract
  • a pinch salt

Instructions

  1. Combine graham cracker crumbs and melted coconut oil or butter to form the crust.
  2. Pack the crust mixture into the bottom of jars or serving dishes.
  3. In a food processor, blend cream cheese, Greek yogurt, honey, lemon juice, vanilla extract, and salt until smooth.
  4. Spoon the cheesecake filling over the crust in each jar.
  5. Refrigerate for 2-3 hours until set, then serve with desired toppings.
