Lighter No Bake Cheesecake

Instructions
- Combine graham cracker crumbs and melted coconut oil or butter to form the crust.
- Pack the crust mixture into the bottom of jars or serving dishes.
- In a food processor, blend cream cheese, Greek yogurt, honey, lemon juice, vanilla extract, and salt until smooth.
- Spoon the cheesecake filling over the crust in each jar.
- Refrigerate for 2-3 hours until set, then serve with desired toppings.
