Roasted Broccoli Pasta

Ingredients

The pasta

  • 8 ounces quinoa angel hair or spaghetti

The vegetables

  • 1 pound fresh broccoli, cut into florets
  • 1 tablespoon minced garlic
  • ½ teaspoon sea salt
  • ½ teaspoon crushed red pepper
  • 2 tablespoons chopped fresh basil

The sauce

  • 3 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 6 ounces fresh Parmesan, grated

The nuts

  • ¼ cup toasted pine nuts

Instructions

  1. Preheat the oven to 420°F and line a baking sheet with parchment paper.
  2. In a medium bowl, toss together the broccoli, olive oil, garlic, and salt.
  3. Spread the broccoli on the baking sheet and roast for 30 minutes, stirring occasionally.
  4. Cook the pasta according to package directions and reserve 1 cup of pasta water.
  5. In a medium saucepan, heat 3 tablespoons of olive oil and add garlic and crushed red pepper, cooking for 1 to 2 minutes.
  6. Add the cooked pasta and reserved pasta water to the saucepan and cook until well coated and partially absorbed, about 3 minutes.
  7. Remove from heat and toss the pasta with the roasted broccoli and Parmesan.
  8. Top with basil and pine nuts before serving.
