Pasta with Roasted Broccoli, Garlic and Oil

Ingredients

The pasta

  • 8 oz pasta

The vegetables

  • lbs broccoli florets
  • 6-8 cloves garlic

The seasoning

  • 2 tbsp extra virgin olive oil
  • to taste kosher salt
  • to taste fresh pepper

The cheese

  • ¼ cup fresh grated Pecorino Romano

Instructions

  1. Preheat the oven to 450°F.
  2. In a baking dish, combine broccoli, olive oil, garlic, salt, and pepper.
  3. Roast the broccoli for about 20 minutes, tossing halfway, until browned and tender.
  4. Meanwhile, boil salted water in a large pot.
  5. Cook the pasta according to package directions for al dente.
  6. Before draining, reserve 1 cup of the pasta water.
  7. Drain the pasta and toss it with the roasted broccoli.
  8. Add ½ cup of reserved pasta water, Pecorino Romano, and adjust seasoning with salt and pepper to taste.
