Rustic Garlic Butter Pasta with Roasted Broccoli

Ingredients

The pasta and vegetables

  • 1 head broccoli
  • 1 teaspoon oil
  • ½ tablespoon dried Italian herbs
  • 8 ounces whole wheat penne pasta
  • 8 ounces mushrooms

The sauce

  • 3 tablespoons butter
  • 1 tablespoon minced garlic
  • ½ tablespoon flour
  • to taste sea salt
  • to taste sharp, hard cheese (like Parmesan)

Instructions

  1. Preheat the oven to 400°F.
  2. Toss broccoli with oil and herbs, season with salt and pepper, and roast on a baking sheet for 20-30 minutes.
  3. Cook pasta according to package directions.
  4. In a large saucepan, melt butter over medium-high heat, add mushrooms and garlic, and season with salt.
  5. Cook mushrooms until browned and soft, about 15-20 minutes.
  6. If too moist, stir in flour with the mushrooms.
  7. Combine cooked pasta with the mushroom mixture, add roasted broccoli, and top with cheese.
