Thai Shrimp and Pineapple Curry

Instructions
- Heat oil in a pot and add the curry paste, stirring to release its aroma.
- Add coconut milk, water, and kaffir lime leaves, then bring to a boil.
- Add shrimp and pineapple, cooking for about 5 minutes over medium to low heat.
- Stir in fish sauce, sugar, and lime juice until well combined.
- Turn off the heat and serve immediately with steamed white rice.
