Ingredients

The curry

  • tablespoons oil
  • 2 tablespoons Thai red curry paste
  • ½ cup coconut milk
  • ½ cup water
  • 3–4 pieces kaffir lime leaves (optional)

The protein and fruit

  • 8 oz shrimp (shelled and deveined, tail-on)
  • 1 cup pineapple cubes

The seasoning

  • ½ tablespoon fish sauce
  • ½ tablespoon sugar (or palm sugar)
  • 1 squirt lime juice

Instructions

  1. Heat oil in a pot and add the curry paste, stirring to release its aroma.
  2. Add coconut milk, water, and kaffir lime leaves, then bring to a boil.
  3. Add shrimp and pineapple, cooking for about 5 minutes over medium to low heat.
  4. Stir in fish sauce, sugar, and lime juice until well combined.
  5. Turn off the heat and serve immediately with steamed white rice.
