  • 1 juice lemon
  • ½ cup olive oil
  • ½ cup almonds

Mediterranean Bowls

  • cooked quinoa quinoa
  • to taste spinach, kale, or cucumber
  • to taste feta cheese
  • to taste kalamata olives
  • to taste pepperoncini
  • to taste thinly sliced red onion
  • to taste hummus
  • to taste fresh basil or parsley
  • to taste olive oil
  • to taste lemon juice
  • to taste salt
  • to taste pepper

Instructions

  1. Blend all ingredients for the roasted red pepper sauce until mostly smooth.
  2. Cook the quinoa according to package instructions.
  3. Assemble the Mediterranean Quinoa Bowls with your choice of ingredients.
