Ingredients

  • 2 pounds grated cassava
  • cups grated mature coconut
  • 4 tablespoons unsalted butter, melted
  • ½ cup white granulated sugar
  • ½ cup light brown sugar
  • 1 14 oz. can coconut milk
  • 1 teaspoon cinnamon spice
  • 1 teaspoon salt
  • ½ teaspoon grated nutmeg
  • ¼ teaspoon minced ginger
  • 2 teaspoons vanilla extract
  • ½ cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13 baking dish.
  2. In a large bowl, mix all ingredients together until well combined.
  3. Pour the mixture into the prepared baking dish.
  4. Bake for about 60 minutes or until the center is firm.
  5. Allow to cool for 10 minutes before cutting into squares and serving.
