Ingredients

The salad

  • 3 cups brown rice, room temperature or slightly warmed
  • ½ cup peanuts
  • 2 oranges peeled and segmented
  • ½ cup crispy, fried shallots
  • 1-2 big handfuls chopped herbs (basil, cilantro, or combination)
  • 4 scallions thinly sliced

Creamy Red Curry Dressing

  • ¾ cup cashew milk
  • 1 tablespoon red curry paste, or to taste
  • 1 juice of one lime
  • 1 teaspoon sugar or other sweetener

Instructions

  1. Prepare the tofu by tossing it in oil and salt, then roasting until golden.
  2. Arrange the salad ingredients on a large platter.
  3. Make the dressing by combining cashew milk, curry paste, lime juice, and sugar in a jar, then shake well.
  4. Serve the salad, allowing people to dress and toss on their own plates or dress it on the main platter.
