Creamy Spiced Carrot and Lentil Soup

Instructions
- Heat oil in a large pot over medium heat.
- Cook diced onion and carrots until the onion is translucent and the carrots are tender.
- Stir in garlic, ginger, cumin, and coriander, and cook until aromatic.
- Add lentils and vegetable broth, bring to a boil, then reduce heat and simmer until lentils are tender.
- Turn off heat and stir in coconut milk and salt.
- Blend half of the soup until smooth, then mix it back with the unblended soup.
- Serve in bowls and garnish as desired.
