Creamy Spiced Carrot and Lentil Soup

Ingredients

The soup

  • 2 tablespoons grapeseed oil
  • ½ cup diced yellow onion
  • 3 cups diced carrots
  • 4 cloves garlic
  • 1 tablespoon grated ginger
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 cup dry red lentils
  • 4 cups vegetable broth
  • 1 can coconut milk
  • ½ teaspoon salt

Optional garnish

  • to taste chopped green onions
  • to taste fresh mint leaves
  • to taste crushed red pepper flakes

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Cook diced onion and carrots until the onion is translucent and the carrots are tender.
  3. Stir in garlic, ginger, cumin, and coriander, and cook until aromatic.
  4. Add lentils and vegetable broth, bring to a boil, then reduce heat and simmer until lentils are tender.
  5. Turn off heat and stir in coconut milk and salt.
  6. Blend half of the soup until smooth, then mix it back with the unblended soup.
  7. Serve in bowls and garnish as desired.
