Ingredients

The base

  • 1 medium yellow onion
  • 2 Tbsp butter
  • 1 cup long grain white rice
  • 3 cups chicken broth

The chicken

  • 1 lb boneless, skinless chicken breast

The seasonings

  • ½ tsp dried thyme
  • ¼ tsp dried sage
  • ¼ tsp salt
  • to taste freshly cracked pepper

The vegetables

  • ½ lb frozen peas and carrots

The creamy element

  • cup heavy cream
  • 4 oz cheddar cheese, shredded

Instructions

  1. Dice the onion and sauté it with butter in a deep skillet until soft.
  2. Dice the chicken breast and add it to the skillet, cooking until opaque.
  3. Add rice, thyme, sage, salt, pepper, and chicken broth, stirring to combine.
  4. Cover and bring to a boil, then reduce heat and let simmer for 15 minutes, stirring occasionally.
  5. Check rice for tenderness, adding more time if necessary.
  6. Stir in frozen vegetables and let sit covered for 5 minutes.
  7. Add heavy cream and stir, adjusting salt if needed.
  8. Top with shredded cheese and broil until melted.
