Ingredients

The Chicken

  • 1 ½ pounds boneless skinless chicken breast
  • 1 ½ teaspoons sea salt
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 2 tablespoons avocado oil

The Cheese Sauce

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 ½ cups milk
  • 16 ounces shredded cheddar cheese
  • 1 teaspoon dried mustard
  • 1 teaspoon garlic powder
  • ¼ teaspoon black pepper

The Casserole

  • 6 cups cooked rice
  • ½ cup sour cream

Instructions

  1. Cook the rice according to package instructions.
  2. Cut the chicken into bite-size pieces and season with salt, garlic powder, and black pepper.
  3. Heat oil in a skillet and cook the chicken until browned.
  4. Transfer the chicken to a large bowl.
  5. In a saucepan, melt butter over medium heat, then whisk in flour and cook for 3 minutes.
  6. Add milk to the saucepan and cook until thickened, about 8 minutes.
  7. Stir in 8 ounces of cheese and reduce heat to low until melted.
  8. Mix the cheese sauce with the chicken, rice, and sour cream in the bowl.
  9. Transfer the mixture to a casserole dish and top with remaining cheese.
  10. Bake at 350°F for 25-30 minutes until hot and bubbly.
