Cheesy Chicken and Rice

The Casserole

Instructions
- Cook the rice according to package instructions.
- Cut the chicken into bite-size pieces and season with salt, garlic powder, and black pepper.
- Heat oil in a skillet and cook the chicken until browned.
- Transfer the chicken to a large bowl.
- In a saucepan, melt butter over medium heat, then whisk in flour and cook for 3 minutes.
- Add milk to the saucepan and cook until thickened, about 8 minutes.
- Stir in 8 ounces of cheese and reduce heat to low until melted.
- Mix the cheese sauce with the chicken, rice, and sour cream in the bowl.
- Transfer the mixture to a casserole dish and top with remaining cheese.
- Bake at 350°F for 25-30 minutes until hot and bubbly.
