Instructions
- Season the chicken breasts with salt and pepper, then heat 1 tablespoon of olive oil in a pan and cook the chicken until no longer pink.
- Transfer the chicken to a plate and let it rest before dicing into bite-sized pieces.
- In the same pan, heat the remaining olive oil and sauté the broccoli until tender but still slightly crispy.
- For the cheese sauce, melt butter in the pan, add garlic, and sauté until fragrant.
- Whisk in flour and cook for a minute, then gradually add stock and milk, stirring until smooth and thickened.
- Stir in the shredded cheese until melted.
- Combine the chicken and broccoli with the cheese sauce, then serve over rice or portion into containers for meal prep.
