Ingredients

Buffalo Chicken and Roasted Broccoli

  • 1 tbsp Olive Oil
  • 3 cups fresh Broccoli Florets
  • 8 oz Chicken Breast
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ½ tsp Kosher Salt
  • ¼ tsp Smoked Paprika
  • 1 small Jalapeño
  • 1 tbsp Unsalted Butter
  • 3 tbsp Frank's Red Hot Sauce

Rice Bowls

  • 2 cups Cooked Rice
  • cup thinly sliced Red Onion
  • cup Shredded Carrot
  • cup chopped Green Onions
  • ¼ cup Blue Cheese Crumbles
  • to taste Homemade Ranch Dressing

Instructions

  1. Preheat the oven to 400°F and prepare the seasoning mixture.
  2. Toss the broccoli florets with olive oil and half of the seasoning, then roast for 15-18 minutes.
  3. Cut the chicken into bite-sized pieces and coat with remaining olive oil and seasoning.
  4. Cook the chicken and jalapeños in a skillet until browned and cooked through.
  5. Add butter and buffalo sauce to the chicken, mixing well.
  6. Assemble the bowls with rice, chicken, broccoli, and desired toppings.
