Easy Buffalo Chicken Rice Bowl

Ingredients

  • 1 lb Rotisserie chicken, shredded
  • ½ cup Buffalo hot sauce
  • 4 cups Romaine lettuce, shredded
  • 1 cup Bell pepper, sliced
  • ¼ cup Red onion, chopped
  • ¼ cup Green onion, sliced thin
  • 1 cup Cherry tomatoes, halved
  • 1 cup Chickpeas, rinsed and drained
  • 2 cups Rice, prepared
  • 1 Avocado sliced
  • ¼ cup Ranch dressing

Instructions

  1. Toss shredded chicken in buffalo hot sauce to your preferred heat level.
  2. In 4 bowls or containers, add ½ cup of prepared rice and 4 oz of chicken to each.
  3. Top each bowl with ¼ cup of chickpeas.
  4. Add greens, veggies, and avocado on top.
  5. Drizzle with extra buffalo sauce and ranch dressing to taste.
