Ingredients

The chicken mixture

  • 3 pieces boneless skinless chicken breasts, cooked & shredded
  • ¾ cup Frank's Red Hot sauce
  • 2 oz cream cheese, softened

The quinoa

  • 1 cup uncooked quinoa
  • 2 cups water

The toppings

  • 4 cups chopped green leaf lettuce
  • 1 cup cherry tomatoes, halved
  • 2 pieces avocados, sliced
  • cup sliced red onion
  • ¼ cup diced fresh cilantro
  • to taste ranch dressing (optional)

Instructions

  1. Cook quinoa by adding it and water to a medium saucepan, bringing it to a boil, then covering and simmering for 15 minutes.
  2. Turn off the heat and let the quinoa sit for 5 minutes before fluffing it with a fork.
  3. In a medium bowl, combine the shredded chicken, hot sauce, and cream cheese, mixing until the chicken is well-coated.
  4. Assemble the bowls by adding ¾ cup of quinoa, ¾ cup of lettuce, and ½ cup of buffalo chicken mixture to each bowl.
  5. Top with cherry tomatoes, sliced avocado, sliced red onion, and fresh cilantro.
  6. Drizzle with ranch dressing if desired and serve immediately.
