Instructions
- Cook quinoa by adding it and water to a medium saucepan, bringing it to a boil, then covering and simmering for 15 minutes.
- Turn off the heat and let the quinoa sit for 5 minutes before fluffing it with a fork.
- In a medium bowl, combine the shredded chicken, hot sauce, and cream cheese, mixing until the chicken is well-coated.
- Assemble the bowls by adding ¾ cup of quinoa, ¾ cup of lettuce, and ½ cup of buffalo chicken mixture to each bowl.
- Top with cherry tomatoes, sliced avocado, sliced red onion, and fresh cilantro.
- Drizzle with ranch dressing if desired and serve immediately.
