Ingredients

The base

  • ¾ cup plain fat free yogurt
  • ½ cup light blue cheese dressing
  • 1 oz 1/3 less fat cream cheese
  • ⅓ - ½ cup Buffalo Wing sauce
  • 10 oz cooked shredded chicken breast
  • ½ cup diced carrots
  • ½ cup diced celery
  • 3 cups cooked quinoa

The toppings

  • 4 oz 50% reduced fat sharp cheddar, shredded
  • 1 oz crumbled blue cheese

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine yogurt, blue cheese dressing, cream cheese, and wing sauce, stirring to mix.
  3. Add shredded chicken, carrots, and celery to the mixture and stir to combine.
  4. Incorporate the cooked quinoa and stir until well mixed.
  5. Transfer the mixture into a 2-quart casserole dish and spread evenly.
  6. Sprinkle cheddar cheese on top, followed by crumbled blue cheese.
  7. Bake in the oven for about 20 minutes until heated through.
  8. Turn the oven to broil and move the dish to a higher oven rack.
  9. Broil for 1-2 minutes until the cheese is golden and bubbly.
