Ingredients

The base

  • 4 tablespoons light butter
  • 3 tablespoons flour
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups skim milk
  • 4 oz 50% reduced fat sharp cheddar cheese, shredded
  • 4 oz sharp cheddar cheese, shredded
  • cup Buffalo wing sauce
  • 4 cans (15 oz each) chickpeas, drained and rinsed
  • 12 oz cooked boneless skinless chicken breast, chopped or shredded

The topping

  • cup plain breadcrumbs
  • ½ teaspoon dried parsley flakes
  • ¼ teaspoon garlic powder

Instructions

  1. 1. Preheat the oven to 375°F and prepare a 9x13 casserole dish.
  2. 2. Melt the butter in a saucepan over medium-low heat, then stir in flour, salt, and black pepper.
  3. 3. Gradually add milk while whisking until smooth, then increase heat and add shredded cheeses, whisking until thickened.
  4. 4. Stir in the Buffalo wing sauce.
  5. 5. In the casserole dish, combine chickpeas and chicken, then pour the cheese sauce over and mix well.
  6. 6. Toast the breadcrumbs in a skillet until golden, then mix with remaining salt, parsley, and garlic powder.
  7. 7. Sprinkle the breadcrumb mixture over the casserole and bake for 40-45 minutes until bubbly.
