BBQ Chicken Salad Bowls with Cilantro Lime Rice

Ingredients

Salad Bowl

  • 3 to 4 cups cooked chopped chicken
  • 1 to 2 cups BBQ sauce
  • 6 to 8 cups chopped romaine lettuce
  • 2 cups fresh or frozen corn kernels
  • 1 15-ounce can black beans
  • ½ medium red onion
  • 1 to 2 cups shredded or cubed Monterey Jack or cheddar cheese
  • 1 to 2 cups chopped tomatoes
  • 1 to 2 medium avocados

Cilantro Lime BBQ Dressing

  • ½ cup mayonnaise
  • cup buttermilk
  • 2 tablespoons chopped cilantro
  • 1 tablespoon lime juice
  • 1 tablespoon red wine or white vinegar
  • 1 clove garlic
  • ½ teaspoon salt
  • ¼ teaspoon ground cumin
  • pinch cayenne pepper
  • pinch black pepper
  • cup BBQ sauce

Instructions

  1. Combine all dressing ingredients in a blender and process until smooth; refrigerate until ready to use.
  2. Toss the chicken with BBQ sauce until well coated.
  3. Assemble the salad bowls by placing lettuce at the bottom of each bowl.
  4. Top the lettuce with cilantro lime rice, corn, black beans, red onion, BBQ chicken, cheese, tomatoes, and avocados.
  5. Drizzle with dressing and serve.
