Instructions
- Preheat the grill to 400ºF and prepare rice by boiling water and adding rice until fluffy.
- Mix spices for the BBQ chicken and rub evenly on chicken breasts.
- Grill chicken and corn for 15-20 minutes, flipping chicken at 8 minutes and adding half of the BBQ sauce.
- While grilling, mix coleslaw ingredients in a bowl and refrigerate.
- In another bowl, combine black beans, cumin, and lime juice.
- Remove chicken and corn from the grill, cut chicken into cubes, and toss with remaining BBQ sauce.
- Distribute chicken, corn mixture, slaw, and rice into bowls or meal prep containers.
