Hawaiian BBQ Chicken Bowls

Ingredients

The main ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts
  • to taste sea salt
  • to taste freshly-cracked black pepper
  • 2 bell peppers bell peppers (1 yellow, 1 red)
  • 1 small red onion
  • 1 small fresh pineapple
  • cup bbq sauce

Optional toppings

  • to taste lemon slices
  • to taste finely-chopped fresh cilantro

Instructions

  1. Heat 1 tablespoon of oil in a large sauté pan over medium-high heat and cook the chicken with salt and pepper for 4-5 minutes until cooked through.
  2. Transfer the cooked chicken to a plate and set aside.
  3. Add the remaining tablespoon of oil to the pan and sauté the bell peppers and onion for 3 minutes.
  4. Add the pineapple and cook for an additional 3-4 minutes until the vegetables are tender.
  5. Return the chicken to the pan, add the bbq sauce, and toss everything together until well combined.
  6. Serve immediately over rice or quinoa, garnished with optional toppings.
