Hawaiian BBQ Chicken Bowls

Instructions
- Heat 1 tablespoon of oil in a large sauté pan over medium-high heat and cook the chicken with salt and pepper for 4-5 minutes until cooked through.
- Transfer the cooked chicken to a plate and set aside.
- Add the remaining tablespoon of oil to the pan and sauté the bell peppers and onion for 3 minutes.
- Add the pineapple and cook for an additional 3-4 minutes until the vegetables are tender.
- Return the chicken to the pan, add the bbq sauce, and toss everything together until well combined.
- Serve immediately over rice or quinoa, garnished with optional toppings.
