Ingredients

Spice Mix

  • 1 tsp mild chili powder
  • ½ tsp ground cumin
  • ¼ tsp garlic powder
  • ¼ tsp smoked paprika
  • tsp cayenne pepper
  • to taste freshly cracked black pepper
  • ¼ tsp salt
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • ½ tsp apple cider vinegar

Rice

  • 1 cup uncooked brown rice
  • cups chicken broth

Bowl Ingredients

  • 1 boneless skinless chicken breast (about ¾ lb.)
  • 1 8oz. can pineapple tidbits in juice
  • 1 15oz. can black beans
  • 1 ripe avocado
  • 2 green onions
  • ¼ bunch fresh cilantro (optional)

Instructions

  1. Cook the rice by combining uncooked rice and chicken broth in a pot, bringing to a boil, then simmering for 25 minutes and letting it sit for 10 minutes.
  2. Prepare the honey spice mix by combining all the spices, olive oil, honey, and apple cider vinegar in a bowl.
  3. Chop the chicken breast into small pieces and toss it with the honey spice mix, then set aside.
  4. Rinse and drain the black beans, drain and chop the pineapple, slice the green onions, chop the cilantro, and slice the avocado.
  5. Heat a skillet over medium heat and sauté the seasoned chicken until cooked through and slightly browned (5-7 minutes).
  6. Assemble the bowls by adding cooked rice, followed by portions of chicken, black beans, pineapple, avocado, green onions, and cilantro.
