boneless skinless chicken breast (about ¾ lb.)

pineapple tidbits in juice

Instructions
- Cook the rice by combining uncooked rice and chicken broth in a pot, bringing to a boil, then simmering for 25 minutes and letting it sit for 10 minutes.
- Prepare the honey spice mix by combining all the spices, olive oil, honey, and apple cider vinegar in a bowl.
- Chop the chicken breast into small pieces and toss it with the honey spice mix, then set aside.
- Rinse and drain the black beans, drain and chop the pineapple, slice the green onions, chop the cilantro, and slice the avocado.
- Heat a skillet over medium heat and sauté the seasoned chicken until cooked through and slightly browned (5-7 minutes).
- Assemble the bowls by adding cooked rice, followed by portions of chicken, black beans, pineapple, avocado, green onions, and cilantro.
