Ingredients

The chicken marinade

  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons honey
  • 2 tablespoons finely chopped chipotle peppers and adobo sauce
  • 1 tablespoon Dijon mustard
  • 4 to 5 cloves garlic, finely minced
  • 2 to 3 tablespoons chopped fresh cilantro
  • ½ teaspoon salt
  • a pinch black pepper
  • 2 pounds thin cut boneless skinless chicken breasts

The bowls

  • to taste spinach, lettuce or spring mix
  • to taste chopped tomatoes
  • to taste chopped or sliced avocado
  • to taste fresh limes
  • to taste cilantro lime rice
  • to taste cilantro lime dressing

Instructions

  1. Whisk together the marinade ingredients: olive oil, lime juice, honey, chipotle peppers and sauce, Dijon mustard, garlic, cilantro, salt, and pepper.
  2. Place the chicken in a shallow dish or ziploc bag and pour the marinade over it, ensuring it's evenly coated. Refrigerate for 2 to 24 hours.
  3. Cook the chicken on a grill, skillet, or broiler until cooked through, about 4-5 minutes per side.
  4. Let the chicken rest for 5-10 minutes before slicing it into strips.
  5. Serve the sliced chicken with the bowl ingredients, ensuring to include the cilantro lime dressing.
