Instructions
- Whisk together the marinade ingredients: olive oil, lime juice, honey, chipotle peppers and sauce, Dijon mustard, garlic, cilantro, salt, and pepper.
- Place the chicken in a shallow dish or ziploc bag and pour the marinade over it, ensuring it's evenly coated. Refrigerate for 2 to 24 hours.
- Cook the chicken on a grill, skillet, or broiler until cooked through, about 4-5 minutes per side.
- Let the chicken rest for 5-10 minutes before slicing it into strips.
- Serve the sliced chicken with the bowl ingredients, ensuring to include the cilantro lime dressing.
