Cilantro Lime Chicken Bowl

Ingredients

The chicken

  • 3 tbsp avocado or olive oil
  • 1 whole lime (zest and juice)
  • 2 tbsp fresh cilantro (chopped and more for garnish)
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 lbs chicken breast

The avocado cream

  • 1 whole avocado
  • 1 whole lime (just the juice)
  • 2 tbsp avocado or olive oil
  • 1 tsp garlic powder
  • to taste salt and pepper
  • 1-2 tbsp water

The cauliflower rice

  • 1 head cauliflower or 1 bag of already riced cauliflower
  • 1 tbsp avocado or olive oil
  • 1 handful fresh cilantro (chopped)
  • to taste salt and pepper

Instructions

  1. Prepare the marinade by mixing oil, lime zest and juice, chopped cilantro, salt, and pepper in a ziplock bag.
  2. Flatten the chicken breasts, add them to the marinade, and refrigerate for at least 15 minutes.
  3. While the chicken marinates, blend the avocado cream ingredients until smooth, adjusting water for desired consistency.
  4. If using a whole cauliflower, rice it using a food processor, then sauté with oil, cilantro, salt, and pepper in a skillet.
  5. Cook the marinated chicken on a grill or skillet over medium-high heat for about 6 minutes on each side until cooked through.
  6. Cook the cauliflower rice for about 5 minutes, stirring occasionally.
  7. Serve the meal by layering cauliflower rice, chicken, avocado cream, and garnishing with fresh cilantro.
