Instructions
- Prepare the marinade by mixing oil, lime zest and juice, chopped cilantro, salt, and pepper in a ziplock bag.
- Flatten the chicken breasts, add them to the marinade, and refrigerate for at least 15 minutes.
- While the chicken marinates, blend the avocado cream ingredients until smooth, adjusting water for desired consistency.
- If using a whole cauliflower, rice it using a food processor, then sauté with oil, cilantro, salt, and pepper in a skillet.
- Cook the marinated chicken on a grill or skillet over medium-high heat for about 6 minutes on each side until cooked through.
- Cook the cauliflower rice for about 5 minutes, stirring occasionally.
- Serve the meal by layering cauliflower rice, chicken, avocado cream, and garnishing with fresh cilantro.
