Chicken Burrito Bowl

Instructions
- Mix the seasoning ingredients in a small bowl and season the chicken on both sides.
- Heat a large skillet over medium heat and add avocado oil. Cook the chicken thighs for 5-6 minutes on each side until cooked through, then set aside.
- Prep the greens, cilantro, onion, lime, and avocados.
- In a bowl, mix the avocados, half of the diced red onion, and garlic powder, then squeeze in some lime juice and season with salt and pepper.
- In the same skillet, add more avocado oil if needed, then add the cauliflower rice and salsa. Cook for 3-5 minutes until warmed through, seasoning as desired.
- Chop the chicken into bite-sized strips and assemble the bowls starting with a bed of greens, then add chicken, cauliflower rice, red onion, cilantro, and mashed avocados. Serve with lime wedges.
