Ingredients

The base

  • 4 cups cauliflower rice
  • ¼ cup low sodium chicken broth
  • ¼ cup scallions, chopped
  • ¼ cup cilantro, chopped
  • 1 tablespoon lime juice

The protein

  • 1.25 pounds ground chicken
  • 2 tablespoons taco seasoning

The toppings

  • 2 cups black beans, drained and rinsed
  • 2 cups frozen corn, defrosted
  • 1 pint cherry tomatoes, quartered
  • ½ cup Greek yogurt
  • 2 tablespoons chipotle in adobo sauce
  • 1 tablespoon lime juice

The oil

  • 1 tablespoon olive oil

The aromatics

  • 1 clove garlic, chopped

Instructions

  1. Heat olive oil in a non-stick pan and sauté garlic until fragrant.
  2. Add cauliflower rice, season with salt, pepper, and chicken broth, then cook until tender.
  3. Transfer to a bowl, cool, and mix in scallions, cilantro, and lime juice.
  4. In another pan, heat oil and cook ground chicken, breaking it into crumbles until opaque.
  5. Add taco seasoning to the chicken and stir until cooked through, then cool.
  6. Assemble the bowls by layering cauliflower rice, corn, black beans, chicken, and tomatoes in meal prep containers.
  7. Optional: Mix Greek yogurt, chipotle sauce, and lime juice, and serve over the bowls.
