Ingredients

  • 1 cup pico de gallo
  • 1 cup mango salsa
  • 1 each avocado, sliced
  • 1 each lime, cut into wedges
  • 1 cup cooked pinto beans
  • 1 cup romaine or iceberg lettuce, sliced

Instructions

  1. Season the chicken with salt and taco seasoning.
  2. Heat olive oil in a skillet over medium heat and cook the chicken for 2-3 minutes on each side.
  3. Prepare the ingredients for assembly by placing them in separate bowls.
  4. Assemble the bowls by adding rice, corn, beans, pico de gallo, chicken, and lettuce.
  5. Top with avocado slices, mango salsa, and serve with lime wedges and optional chips.
