Ingredients

The Burrito Bowls

  • 24 ounces cauliflower rice
  • 1 tablespoon lime juice
  • 1 head romaine lettuce
  • to taste pico de gallo
  • to taste lime wedges

The Guacamole

  • 2 large avocados
  • ½ teaspoon salt
  • 1 tablespoon lime juice

Instructions

  1. Season the chicken breasts with salt and pepper, and sprinkle with the spice mixture.
  2. Heat a skillet over medium-high heat and cook the chicken until browned, then flip and cover to cook through.
  3. Let the chicken rest before cutting it into bite-sized pieces.
  4. Prepare the cauliflower rice according to package instructions or cook fresh cauliflower rice in the skillet.
